
These pancakes are seriously delicious, you’d never know they are only three ingredients and completely healthy! I found this recipe when my son was one (three years ago) and they quickly became a staple in our household. Now both my kiddos; age 4 and 1, love these pancakes! This toddler friendly pancake recipe is only three ingredients: banana, egg and flour (white or whole wheat). I also like to add cinnamon, but it’s optional. The original recipe is from Yummy Toddler Food.
Ingredients:
2 Medium Bananas: with a few brown spots
2 Large Eggs
4 Tablespoons Flour: white flour or whole wheat flour
1/2 Teaspoon Cinnamon: optional
Step 1: Mash Bananas

Mash the bananas in a medium sized bowl. You can use a fork or a hand masher to mash the bananas until they are a smooth consistency, with only a few lumps. Bananas with a few brown spots work best since they are already soft.
Step 2: Mix

Add the flour, eggs and cinnamon (if using) into the bowl with the bananas and stir with a fork until well blended.
Step 3: Cook

Heat a skillet or flat-griddle to medium heat. Place 1-2 tablespoon of batter onto the skillet and let cook for about 3-4 minutes. Flip the pancakes when the edges start to firm and the bottom is a golden brown. The pancakes will have a soft texture to them from the bananas.

Our entire family enjoys eating these delicious and healthy toddler pancakes. I usually serve these pancakes for breakfast with a side of sliced fruit or yogurt. If you make a big batch, keep the leftovers in the fridge for a snack time treat. Your kids will love it!
